I did some cooking today! I haven't been doing alot of that lately, well except boxed pasta and the like.
I roasted a turkey!
and I baked two loaves of bread!! {wow, that first one disappeared fast!} I made the dough last weekend, put it in the fridge, and today I pulled it out and baked it. go here for details & the recipe.
I was going to tell you about the red flannel hash I made this week, but we ate it before I got any pictures. I am curious though, do any of you make red flannel hash with your pot roast leftovers?

Savoring Autum
We brought home and carved three of these beauties :)
Swedish Apple Pie
peeled & chopped apples, enough to fill your pie plate level without mounding
1 tbs white sugar
1 tbs brown sugar
1 tsp cinnamon
1 stick butter/margarine melted
1 cup white sugar
1 cup flour
1 egg
1/2 cup chopped walnuts
pinch salt
In a bowl, mix the apples with the next three ingredients. Put them into a buttered pie plate. Now, you don't want to over fill your pie plate because the 'crust'/dough will roll off while baking if you do. Also, try not to leave huge spaces in the apples, or the dough will flow to the bottom of your pie. {where it will still taste yummy} This is why I chop instead of slice for this pie :)
Mix together the remaining ingredients, and pour over top of the apples. Bake at 350 degrees for 45 minutes, until brown.
*note: there is no bottom crust, unless yours flows to the bottom. This happens to me sometimes {but somehow never to my Mom?}. It still tastes good, it just isn't pretty {can you guess why I don't have a photo for you?}. Even with the crust on top where it belongs, this pie isn't much of a looker, but it is yummy. Like a big cookie baked on top of cinnamon apples :)

Recipe Share
Cherry Squares
2 cups sugar
1 cup vegetable oil
4 eggs
3 cups flour
1/2 teaspoon salt
1 tablespoon almond extract
1 can cherry pie filling (enough for one pie)
Cream together the oil and sugar, then add eggs and mix well. Add in the flour, salt, and almond extract. Grease a 9"x13" pan and spread slightly more than half the batter on the bottom. Pour pie filling over batter. Drop remaining batter by spoonfuls over top. Pie filling will show through in places. Bake at 350 F for one hour. Cut into squares and serve topped with whipped cream. Other pie fillings or extracts can be substituted to suit your tastes. (I recommend lemon filling with vanilla extract)
Cherry Squares are a favorite from my childhood, I hope you enjoy them. I'd share a picture of them, but they get eaten up too fast ;)
